Rum Cocktails

TAHITIAN HOLIDAY

  • 1.5 oz Virago Four Port Rum

  • 0.75 oz lime juice

  • 0.75 oz orange juice

  • 0.25 oz cinnamon simple syrup

  • 0.25 oz vanilla simple syrup

  • 0.25 oz Allspice dram

  • 1 dash Angostura bitters

Shake all with ice and strain into an ice-filled glass. Garnish with mint sprig.

CLASSIC DAIQUIRI

  • 2 oz Virago Four Port Rum

  • 1 oz lime juice

  • 1 oz simple syrup

Shake with ice & double strain into a coupe. Garnish with lime wheel.


CUT THE CONVERSATION

  • 2 oz Virago Four Port Rum

  • 0.75 oz lemon juice

  • 0.5 oz crème de cacao

  • 0.5 oz maple syrup

Shake with ice. Strain over ice & garnish with orange peel & cherry.

HURRICANE

  • 1.5 oz Virago Four Port Rum

  • 0.25 oz Galliano

  • 1.25 oz orange juice

  • 1.25 oz pineapple juice

  • 0.5 oz passionfruit nectar

  • 0.33 oz lime juice

  • 0.5 oz simple syrup

  • Dash Angostura bitters

Shake with ice & strain over ice. Garnish with pineapple wedge or orange wheel


rum old fashioned

  • 2 oz. Virago Four-Port Rum

  • 0.25 oz. Demerara Simple Syrup

  • 2 Dashes Angostura Bitters

  • Orange Peel For Garnish

Stir with ice. Strain over a large ice cube in an Old Fashioned glass. Garnish with orange peel.

GINGER PEACH DAIQUIRI

  • 1.5 oz Virago Four Port Rum

  • 1.5 oz peach juice

  • 0.5 oz lime juice

  • 0.25 oz simple syrup

  • 2 slices fresh ginger

Muddle ginger & add other ingredients. Shake with ice & double strain into a coupe.


VIRAGO LIBRE

  • 1.5 oz Virago Four Port Rum

  • 0.75 oz simple syrup

  • 1 oz lime juice

  • 4 mint leaves

  • Splash coke

  • Splash soda water

Muddle mint with rum, simple & lime. Shake & strain over ice. Top with splash of coke & soda. Garnish with mint & lime.

PAINKILLER

  • 1.5 oz Virago Four Port Rum

  • 2.25 oz pineapple juice

  • 0.75 oz orange juice

  • 0.75 oz crème of coconut

Shake with ice & strain into an ice-filled glass. Garnish with grated nutmeg & pineapple wedge.


HEMINGWAY

  • 1.25 oz Virago Four Port Rum

  • 0.25 oz Luxardo

  • 0.75 oz grapefruit juice

  • 0.5 oz lime juice

Shake with ice. Double strain into coupe. Garnish with lime wheel.

THE PERFECT STORM

  • 0.75 oz Virago Four Port Rum

  • 0.75 oz Virago Modern Gin

  • 0.75 oz lime juice

  • 1 dash Angostura

  • 3 oz Ginger Beer

Build in a tall glass over ice. Stir gently.


MOJITO

  • 1.5 oz Virago Four Port Rum

  • Juice from one lime

  • 0.5 oz simple syrup

  • Mint

Add small bunch of mint & LIGHTLY press with muddler. Add ice, rum, lime, lime shell and simple syrup. Shake and strain into an ice-filled tall glass. Top with 1 oz club soda. Garnish generously with mint.


GIN COCKTAILS

BASIL GIMLET

  • 1.5 oz Virago Modern Gin

  • 1 oz lime juice

  • 1 oz simple syrup

  • 4 basil leaves

  • Soda water

Muddle basil. Add all ingredients except soda water. Shake with ice and strain into ice filled old fashioned glass. Add splash of soda water. Garnish with basil leaf.

AVIATION

  • 1.5 oz Virago Modern Gin

  • 0.5 oz lemon juice

  • 0.25 oz simple syrup

  • Barspoon Luxardo

  • Barspoon Crème de Violette

Shake with ice & double strain into coupe. Garnish with Luxardo Cherry.


TOM COLLINS

  • 1.5 oz Virago Modern Gin

  • 1 oz lemon juice

  • 0.5 oz simple syrup

  • Soda water

Build over ice in tall glass. Top with soda water. Garnish with lemon wedge.

  • 0.75 oz Virago Modern Gin

  • 0.75 oz lime juice

  • 1 dash Angostura bitters

  • 3 oz Ginger Beer

Build in a tall glass over ice.


BEBBO

  • 1.5 oz Virago Kali Hibiscus Gin

  • 1 oz honey syrup

  • 0.75 oz lemon juice

  • 0.25 oz blood orange juice

Shake with ice. Double strain into a coupe. Garnish with lemon twist. (Honey Syrup – mix ½ cup honey with ½ cup warm water. Mix thoroughly and store in the refrigerator for up to 30 days).

Gin Rickey

  • 1.5 oz Virago Modern Gin

  • 0.5 oz lime juice

  • Soda water

Combine gin & lime juice in ice-filled glass. Top with soda water. Garnish with lime twist.


Bees Knees

  • 1.5 oz Virago Modern Gin

  • 0.5 oz lemon juice

  • 0.5 oz orange juice

  • 0.75 oz honey

  • Dash orange bitters

Combine all & shake with ice. Double strain. Garnish with lemon twist.

Gin Mule

  • 1.5 oz Virago Modern Gin

  • 0.5 oz lime juice

  • 0.5 oz simple syrup

  • Ginger Beer

  • Mint Leaves

Muddle mint in shaker, add gin, lime, simple & shake. Pour over ice and top with ginger beer.


Pomegranate Gimlet

  • 1.5 oz Virago Modern Gin

  • 1 oz pomegranate juice (such as Pom)

  • 0.75 oz lime juice

  • 0.5 oz simple syrup

Shake with ice. Double strain into coupe or martini. Garnish with rosemary sprig.


COFFEE LIQUEUR COCKTAILS

Clarabelle

  • 0.75 oz Virago Rum 151

  • 0.75 oz Virago Coffee Liqueur

  • 0.5 oz simple syrup

  • 1.5 oz. milk

  • 1.5 oz. cream

Mix with ice & shake double the time. Double strain into coupe. Garnish with espresso powder.

Russian Influence

  • 0.75 oz Virago Four Port Rum

  • 0.75 oz Virago Coffee Liqueur

  • 0.5 oz Half & Half

  • 0.5 oz brewed coffee

  • 0.25 oz simple syrup

Shake with ice & serve over ice in old fashioned glass.
